THE MOROCCAN KITCHEN 

The souks and the old medinas of Morocco are the lungs of the country's culinary world. Outside of Morocco, many of the ingredients required for creating authentic Moroccan recipes are easily available in supermarkets and specialist deli's. 
 
Dried fruit and nuts, such as apricots, dates, prunes, figs, almonds, walnuts, and pistachio nuts feature frequently in tagines and couscous. 

Tagines 

Unique to North Africa and predominant feature of Moroccan cuisine, a tagine is essentially a glorified, slow-cooked stew, deeply aromatic and full of flavour. 

Couscous 

Couscous is morocco's national dish and the staple of North Africa. The word "couscous" refers to the granules as well as the recipe. The dish is extremely versatile and can be served as an accompaniment or served as a course on its own. 

Spices 

Moroccan spices are varied and pungent with a heavy leaning towards ginger and cumin, both of which are held in high esteem for their digestive qualities.
